Ageli Assyrtiko is a truly impressive wine, a dynamic expression shaped by its 16-year-old vineyard’s unique microclimate.
Half of the vintage matures in 31-year-old, 1,000-liter Austrian barrels, while the remainder rests in concrete egg amphorae and stainless steel tanks. Bâtonnage with fine lees is consistently applied across all three methods.
In the glass, the varietal character shines through with clear notes of fruits, herbs, minerality, and a distinctive metallic quality—a direct reflection of the region’s microclimate. On the palate, expect a crisp acidity and substantial volume, both results of the bâtonnage, culminating in a versatile wine perfect for any occasion.
Serve with stuffed vegetables, seafood, fish, white meats, and pasta dishes accompanied by lemon-based sauces.
