Perpetuus that means continuous, everlasting, perpetual. In 2004, the NICO LAZARIDI Winery, through its continuous quest of new tasting experiences and after a planning of many years and incessant vinifications in small individual batches, created two new products: a white and a red wine named Perpetuus.

Vinification Method
Initially, the fermentation is carried out at a temperature of 12οC. Subsequently, the temperature is rising to 16 οC in order to facilitate the process with indigenous yeasts. Absence of malolactic fermentation. It matures for 2 months into tanks, applying the battônage method and using fine wine lees of Manzoni. Then, it ages for 4-5 months into barrels (80% acacia barrels, 20% oak barrels). Changing the winemaking process gives the wine a fruity and structured character that ties harmonious with the presence of the barrel.

Tasting Notes
Bright gold color with green iridescence. Aromas of ripe, white-flesh fruits with notes of honey, acacia and jasmine. Rich and complex body with a crispy acidity and some aromas of citrus fruits. Unique, pleasant, greasy finish with great complexity and duration.

Will respond to aging for up to 6 years after harvest.
Perfect Pairing
Served at 10οC, an excellent match for shellfish, fish with light sauces, avgotaraho(botargo), white meats and vegetables with complex sauces.
