Vinification Method
White vinification with skin contact method at 8-12οC. Alcoholic fermentation in graduated temperatures from 12 to 17οC in stainless steel tanks. Assyrtikois fermented with indigenous yeasts, highlighting the local terroir. Small part of the Assyrtiko ends its fermentation in acacia barrels and stays there for 6 months by performing the battonage. The rest of the wine stays on fine lees with occasional stirring in stainless tanks.

Tasting Notes
It has a pale yellow green color with fresh aromas of pineapple, grapefruit and peach that are combined in harmony with the sweet hints of jasmine, aromas that reveal the short maturation in acacia barrels. As the wine evolves its aromatic pallet reminiscent of the mineral character of the Assyrtiko. It is round in the mouth with fresh acidity that predisposes you its long-lasting aftertaste and its unique evolution.

Will respond to aging for up to 4-5 years after harvest.

Served chilled at 8-12ΟC, an excellent match for fresh vegetables, fish and seafood with acid sauces, mushrooms, white meat like pork and poultry, hummus and sushi.
